The Cuisine

Our cuisine is based on ancient recipes and simple staple ingredients: bread, oil, honey, cheeses, cured meats, fresh pasta, vegetables, fresh meat and good wine. These products, of our proud and fertile land, are created by the expert hands of skilled local craftspeople.
We prepare for you: carasau, gucciau and frattau bread; fresh pecorino cheese ravioli, salami, sausages, Oliena sheep and goat cheeses, roast suckling pig and a variety of tasty mutton dishes, seasonal vegetables with local extra-virgin olive oil and finally Sevadas topped with sweet honey or bitter honey (when available). To quench your thirst we offer our Cannonau, the red wine that captures the aromas of myrtle, almond and the sunshine drenched soil at the foot of Mount Corrasi.
All the excellent products of our larder can be purchased directly at the restaurant.
